Indonesian Sweet Martabak : Martabak Manis Indonesia

Ingredients

  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/2 teaspoon yeast
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/4 cup water
  • 2 tablespoons butter
  • 1/4 cup chocolate
  • 1/4 cup peanuts
  • 1/4 cup sweetened condensed milk

Directions

  1. Combine first 7 ingredients in a bowl. Adjust water amount to make a slightly runny batter and let sit on the counter for 3 hours. It will thicken up.
  2. Finely chop the chocolate (good quality works best).
  3. Finely chop the peanuts (salted works best).
  4. Spray a nonstick skillet or griddle and cook the batter pancake style (makes 2), flipping once.
  5. When cooked, butter the top.
  6. Pour generous amount of sweetened condensed milk over top and sprinkle with chocolate and nuts.
  7. Fold in half like a taco.
  8. Cut into strips and serve warm.

Ingredients

  • 8-9 chicken pieces, skin on(I have use drums and thighs, all breasts, or wings, all delicious. Cooking times are for bone-in, sk)
  • 1 cup honey
  • 3/4 cup soy sauce
  • 1/2 cup finely minced ginger
  • 1/2 cup minced garlic

Directions

  1. Heat honey, soy sauce, garlic and ginger in small saucepan on medium heat for five minutes.Place chicken, skin side down, in appropriately sized casserole.
  2. Pour marinade over chicken and refrigerate overnight or for at LEAST 4 hours.
  3. Preheat oven to 350.
  4. Cook chicken, covered, for 30 minutes.
  5. Uncover, turn chicken pieces over, increase heat to 375, and cook for 30-40 minutes longer, basting occasionally.
  6. Make sure that the sauce does not cover chicken, and only reaches about halfway up.
  7. This will let the skin get crispy and gorgeously dark.
  8. I love this with rice (cooked with vegetable stock), fresh cilantro and lime juice, and mango salad (recipe posted).
  9. To freeze: Place chicken and sauce ingredients in a large freezer bag.
  10. Seal, label and freeze.
  11. To serve: Thaw in fridge and proceed with cooking directions.

Ingredients

  • 4-6 large spring roll wrappers
  • 1 egg, beaten
  • 8 ounces cooked chicken breasts, sliced into thin strips
  • 1 medium red onion, thinly chopped
  • 1 garlic clove, minced
  • 1 inch fresh gingerroot, minced
  • 1 teaspoon sambal oelek
  • 1 teaspoon terasi oedang
  • 10 ounces white cabbage, thinly sliced
  • 8 ounces bean sprouts
  • 1(6ounce) can bamboo shoots
  • 1 large carrot, shredded
  • 1 tablespoon kecap manis
  • 2 tablespoons peanut oil

    Directions

  1. Heat your wok and add the oil.
  2. Add onion, ginger, minced garlic and soften in wok.
  3. Add the Sambal and trassi and cook for a further 2 minutes.
  4. Add the vegetables, chicken and ketjap manis.
  5. Toss until vegetables are soft and "just" cooked.

To make the Loempia's:.
  1. Spread out 2 spring roll sheets one on top of the other with the corners opposite from each other.
  2. Spoon in a generous amount of filling to the top center spring roll sheet.
  3. Fold in the top and bottom corners over the filling.
  4. Fold in the left and right corners making sure the filling is packed tight.
  5. Next fold in the second spring roll over the first in the opposite direction.
  6. Spread some beaten egg over the final folds to help them stick.
  7. Fry in hot oil for about 5 minutes, making sure both sides are browned equally.
  8. Serve with peanutsauce or just Ketjap manis and sambal.

How To Make Popular Indonesian Fried Rice


Ingredients

  • 2 cups uncooked long-grain white rice
  • 2 eggs, beaten
  • 2 teaspoons sesame oil
  • 1/2 teaspoon salt
  • 8 ounces boneless skinless chicken thighs, cut into 1/2 inch strips
  • 6 ounces raw shrimp, peeled
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped garlic
  • 1 medium onion, finely chopped
  • 2 teaspoons finely chopped fresh gingerroot
  • 1 tablespoon dried shrimp paste
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon chili bean sauce or 1teaspoon sambal oelek
  • 1 tablespoon oyster sauce
  • 1 tablespoon kecap manis or dark soy sauce

Garnish

  • 3 tablespoons finely chopped spring onions
  • 1/2 cup fresh cilantro leaves, chopped

Directions

  1. Boil rice in plenty of salted water until cooked.
  2. Rinse, drain and spread the rice to cool.
  3. Do this at least two hours ahead, or preferably, leave overnight in the fridge.
  4. Combine eggs with sesame oil and salt, and put aside (see below).
  5. Heat wok or large frying pan over heat until hot.
  6. Add oil, and wait until it is very hot and slightly smoking.
  7. Add the onions, ginger, shrimp paste, garlic, and pepper, and stir-fry for 2 minutes, squashingthe shrimp paste as you go.
  8. Then add chicken and shrimp and stir-fry for a further 2 minutes.
  9. Add rice and continue to stir-fry for 3 minutes.
  10. Now add the chilli bean sauce or sambal oelek, oyster sauce and ketjap manis/dark soy sauceand continue to stir-fry for 2 minutes.
  11. Finally, add egg mixture and continue to stir-fry for another minute.
  12. Alternatively make 2 thin omelettes from the egg mixture ahead of time and cut into strips.
  13. These can then be used as garnish on the finished dish.
  14. Turn onto large serving platter and garnish with the spring onion and fresh cilantro, and serve hot.
